We wanted to pay homage to the wonderful Simcoe hop. This piney and fruity wonder forms the backbone or genesis of so many fantastic beers, including being a large part of the dry hop for Oregon Trail.

In this beer we've used Simcoe in four different forms! We used whole cone in the kettle before whirlpooling with Dynaboost. We then dry hopped with cryo before adding hyperboost to finish off. Expect Simcoe, and lots of it in this dry and bitter Pale Ale.
